    Make the Crust

    In a large bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the mixture forms a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Preheat Oven

    Preheat the oven to 375°F (190°C).

    Roll Out the Dough

    On a floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.

    Bake the Crust

    Prick the bottom with a fork and bake for 20-25 minutes or until golden brown. Remove from the oven and let it cool.

    Prepare the Filling

    In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Spread the mixture over the cooled tart crust.

    Arrange the Fruits

    Slice the assorted seasonal fruits and arrange them on top of the cream cheese filling.

    Glaze the Tart

    In a small saucepan, heat apricot preserves until melted. Brush over the arranged fruits for a shiny glaze.

    Refrigerate the tart for at least 1 hour before slicing and serving.
