Prepare the Duck

Cook the duck breast in a skillet over medium heat until crispy and cooked through, about 6-8 minutes per side. Let it rest, then shred the meat.

Prepare the Filling

In a large mixing bowl, combine the shredded duck, julienned carrots, shredded cabbage, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well.

Assemble the Spring Rolls

Lay a spring roll wrapper on a clean surface. Place a generous amount of the duck filling in the center. Fold the sides over the filling and then roll it up tightly. Seal the edge with a little water.

Fry the Spring Rolls

In a deep skillet or fryer, heat oil over medium-high heat. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Serve hot with sweet chili sauce for dipping.
