Slice the Zucchini
Wash the zucchini thoroughly and slice them into thin rounds or half-moons, depending on your preference.

Chop the Tomatoes
Wash the fresh tomatoes, remove the core, and chop them into small pieces.

Prepare the Mushrooms
Clean the mushrooms with a damp cloth and slice them thinly.

Wash the Arugula
Rinse the arugula leaves under cold water and pat them dry with a clean towel.

Sauté the Vegetables
In a large skillet, heat a little olive oil over medium heat. Add the sliced zucchini and mushrooms, and sauté for about 5-7 minutes or until they are tender. Stir occasionally.

Add Tomatoes
Add the chopped fresh tomatoes to the skillet and cook for an additional 2-3 minutes until they are just softened.

Melt the Swiss Cheese
Sprinkle the shredded Swiss cheese over the sautéed vegetables, cover the skillet, and let it sit for about 2 minutes until the cheese melts.

Once the cheese has melted, carefully transfer the sautéed vegetable mixture onto plates.
