    Roast the Tomatoes

    Preheat the oven to 400°F (200°C). Cut the Roma tomatoes in half and place them cut side up on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and black pepper. Roast for 30-35 minutes until caramelized.

    Sauté the Vegetables

    In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion, minced garlic, and diced carrot. Cook for about 5-7 minutes until the vegetables are softened.

    Combine Ingredients

    Once the tomatoes are roasted, add them to the pot with the sautéed vegetables. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender in batches and blend until smooth.

    Add Cream and Seasonings

    Stir in the heavy cream, chopped basil, sugar, salt, and black pepper. Heat gently for another 5 minutes, but do not bring to a boil.

Serving

    Serve the Bisque

    Ladle the bisque into bowls. Garnish with shaved Parmesan cheese and croutons before serving. Enjoy!
