Strip Loin

Prepare the Steak
Remove the strip loin steaks from the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides with salt and black pepper.

Cook the Steak
In a large skillet over medium-high heat, add olive oil. Once hot, add the seasoned strip loin steaks. Cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for 5 minutes.

Mash and Mix
Drain the potatoes and return them to the pot. Add butter, egg yolks, heavy cream, salt, and nutmeg. Mash until smooth and creamy.

Pipe the Potatoes
Transfer the potato mixture to a piping bag. Pipe small mounds onto a baking sheet. Preheat oven to 375°F (190°C) and bake for about 20 minutes or until golden brown.

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and slice them in half.

Sauté the Sprouts
In a large skillet, heat olive oil over medium heat. Add Brussels sprouts, salt, black pepper, and cayenne pepper. Cook for about 10-12 minutes until they are tender and caramelized.

Add Maple Syrup
Drizzle maple syrup over the Brussels sprouts and toss to coat. Cook for an additional 2-3 minutes before serving.
