Steak Preparation

    Season the Steak

    Sprinkle salt and black pepper on both sides of the 6 oz Ruth Family Farms Hereford Steak. Let it sit at room temperature for about 15 minutes to enhance the flavor.

    Cook the Steak

    Preheat a skillet over medium-high heat. Add a tablespoon of olive oil. Once hot, place the steak in the skillet and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let it rest for 5 minutes.

Potato Preparation

    Prepare the Potatoes

    Wash and peel the rooster potatoes. Cut them into wedges or cubes as desired.

    Cook the Potatoes

    In a pot, bring salted water to a boil. Add the potato pieces and cook for about 10-15 minutes until fork-tender. Drain and let them cool slightly.

Egg Preparation

    Cook the Eggs

    In a non-stick skillet, heat a small amount of olive oil over medium heat. Crack the local cage-free eggs into the skillet and cook to your preference (sunny side up, over-easy, etc.). This usually takes about 3-4 minutes.

Chimichurri Preparation

    Make the Chimichurri

    In a food processor, combine fresh parsley, fresh cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Pulse until everything is finely chopped and well mixed. Adjust seasoning to your taste.

Assembly

    Plate the Dish

    On a plate, serve the rested steak alongside the potato wedges and fried eggs. Drizzle the chimichurri sauce generously over the steak and serve immediately.
