Preparation

    Prepare the Steak

    Season the 6oz Ruth Family Farms Hereford steak generously with salt and pepper on both sides. Let it sit at room temperature for about 20 minutes before cooking.

    Prepare the Rooster Potatoes

    Wash and scrub the 2 medium Rooster potatoes. Cut them into small cubes (about 1-inch pieces) for even cooking.

    Prepare the Eggs

    Crack the 2 local eggs into a bowl and whisk them gently with a pinch of salt and pepper. Set aside.

Cooking

    Cook the Potatoes

    In a large skillet over medium heat, add a tablespoon of oil. Once hot, add the cubed Rooster potatoes. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and crispy. Season with salt and pepper to taste. Remove from skillet and keep warm.

    Cook the Steak

    In the same skillet, add another tablespoon of oil if needed. Increase the heat to medium-high. Once the oil is shimmering, add the seasoned steak. Cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from skillet and let rest for 5 minutes before slicing.

    Cook the Eggs

    In a separate non-stick skillet, add a little butter or oil over medium heat. Pour in the whisked eggs and cook, stirring gently, until they are scrambled to your liking. This should take about 3-4 minutes.

Assembly

    Plate the Dish

    On a plate, place the crispy Rooster potatoes as a base. Slice the rested steak and arrange it on top of the potatoes. Add the scrambled eggs beside the steak. Drizzle chimichurri sauce over the steak and serve immediately.
