    Prepare the Sirloin

    Preheat your smoker to 225°F (107°C). Season the sirloin steak generously with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes to allow the flavors to meld.

    Prep the Onions

    Slice the onions thinly. Heat olive oil in a skillet over medium-low heat. Add the sliced onions and cook slowly until they become golden brown and caramelized, about 20-25 minutes. Stir occasionally to prevent burning.

Smoking the Steak

    Smoke the Sirloin

    Once the smoker is ready, place the seasoned sirloin steak on the grill grates. Smoke for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Melt the Cheese

    During the last 10 minutes of smoking, place the Swiss cheese slices on top of the steak to melt slightly.

Assembly

    Assemble the Sandwich

    Once the steak is done, remove it from the smoker and let it rest for 10 minutes. Slice the smoked steak against the grain. On a plate, layer the sliced steak, followed by the caramelized onions, arugula, and a generous spread of horsey mayo.

    Serve the assembled sirloin sandwich immediately, with extra horsey mayo on the side if desired.
