Ice Cream Base

Method

Ice Cream Base Preparation

    Heat Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot, but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until well combined and slightly pale in color.

    Temper Egg Mixture

    Gradually add about half of the hot milk mixture to the egg yolk mixture, whisking constantly to prevent the eggs from curdling.

    Combine and Cook

    Pour the tempered egg mixture back into the saucepan with the remaining milk mixture. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

    Add Vanilla

    Remove the saucepan from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then chill in the refrigerator for at least 4 hours or overnight.

Flavoring the Ice Cream

    Prepare Flavors

    Once the ice cream base has cooled, divide it into five equal portions in separate bowls.

    Vanilla Flavor

    Leave one portion plain for vanilla ice cream.

    Espresso Flavor

    To the second portion, add the espresso powder and mix until fully combined.

    Chocolate Flavor

    In the third portion, mix in the cocoa powder until fully incorporated.

    Strawberry Flavor

    Add the pureed fresh strawberries to the fourth portion and stir until well mixed.

    Salted Caramel Flavor

    In the last portion, fold in the salted caramel sauce gently to create a marbled effect.

    Raspberry Sorbet

    For a dairy-free option, use the raspberry puree in a separate bowl with water or simple syrup to create a sorbet base.

Churning and Freezing

    Churn Ice Cream

    Pour each flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer to Containers

    Transfer the churned ice cream into airtight containers and smooth the top with a spatula.

    Freeze

    Freeze the containers for at least 4 hours or until firm.
