Preparation of Salad

    Prepare the Potatoes

    Place the new potatoes in a pot of salted water. Bring to a boil and cook for about 15-20 minutes until fork-tender. Drain and let cool slightly before cutting them in halves.

    Blanch the Asparagus

    Trim the ends of the asparagus and bring a pot of salted water to a boil. Add the asparagus and blanch for 2-3 minutes until bright green and tender-crisp. Immediately transfer them to a bowl of ice water to stop the cooking process. Drain and set aside.

    Halve the Cherry Tomatoes

    Wash the cherry tomatoes and cut them in half. Set aside.

    Combine Salad Ingredients

    In a large bowl, combine the smoked salmon, asparagus, halved new potatoes, and cherry tomatoes. Add the mixed greens and gently toss everything together.

Preparation of Lemon Aioli

    Make the Aioli

    In a small bowl, combine the mayonnaise, minced garlic, lemon juice, and olive oil. Whisk until well combined and smooth. Season with salt and black pepper to taste.

Serving

    Divide the salad mixture onto serving plates and drizzle the lemon aioli on top. Serve immediately and enjoy your Salmon Nicoise!
