Shrimp Preparation

Boil the Shrimp
In a large pot, combine 4 cups of water, 1 tablespoon of salt, and 1 tablespoon of Old Bay seasoning. Bring to a boil.

Ice Bath
Immediately transfer the cooked shrimp to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes, then drain and set aside.
Pickling Liquid Preparation

Make the Pickling Liquid
In a medium saucepan, combine 1 cup of apple cider vinegar, 1 cup of olive oil, and 1 cup of water. Add minced garlic, Dijon mustard, honey, red pepper flakes, black peppercorns, and bay leaves.

Simmer
Bring the mixture to a simmer over medium heat, stirring occasionally. Let it simmer for about 5 minutes to allow the flavors to meld.

Cool the Liquid
Remove from heat and let the pickling liquid cool to room temperature.
Combining Ingredients

Combine Shrimp and Pickling Liquid
In a large bowl, combine the cooled shrimp with the pickling liquid. Ensure the shrimp are fully submerged.

Refrigerate
Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop.

Make the Cocktail Sauce
In a small bowl, combine ketchup, prepared horseradish, lemon juice, Worcestershire sauce, and hot sauce. Mix well until smooth.

Taste the sauce and add salt as needed. Adjust any other ingredients to suit your taste.
