Prepare the Pear Filling
In a mixing bowl, combine the diced pears, mascarpone cheese, brown sugar, lemon juice, and nutmeg. Mix well until the pears are coated and the mixture is smooth. Set aside.

Make the Egg Mixture
In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

Fill the Bread
Take one slice of bread and spread a generous amount of the pear filling on top. Place the second slice of bread on top to create a sandwich.

Prepare the Caramel Sauce
In a saucepan over medium heat, combine the sugar and butter. Stir constantly until the sugar dissolves and turns a golden color. Gradually add the heavy cream, whisking continuously until smooth. Remove from heat and stir in the vanilla extract and a pinch of salt.
