Burger Preparation

    Prepare the Beef Patties

    Divide the ground Hereford beef into two equal portions and form into balls. Smash each ball onto a hot grill or skillet to create thin patties. Season with salt and pepper.

    Cook the Patties

    Cook the smashed patties for 3-4 minutes on one side until browned. Flip and cook for another 2-3 minutes until desired doneness. Top each patty with goat cheese during the last minute of cooking to allow it to melt.

Pesto Preparation

    Make the Arugula Pesto

    In a food processor, combine fresh arugula, olive oil, Parmesan cheese, garlic cloves, and salt. Blend until smooth, scraping down the sides as necessary. Adjust salt to taste.

Tomato Jam Preparation

    Prepare the Tomato Jam

    Chop the tomatoes and place them in a saucepan over medium heat. Add sugar and apple cider vinegar. Cook for 20-25 minutes until thickened and jam-like consistency is achieved. Season with salt to taste.

Potato Side Preparation

    Roast the Potatoes

    Preheat the oven to 400°F (200°C). Toss baby potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes or until golden brown and crispy.

Assembly

    Assemble the Burgers

    Spread a layer of arugula pesto on the bottom half of each beer bun. Place the cooked beef patty with melted goat cheese on top, followed by a generous spoonful of tomato jam. Top with fresh arugula and cover with the top half of the bun.

    Serve the PB & J Burger with a side of roasted baby potatoes. Enjoy!
