Sausage Preparation

    Mix the Meat

    In a large bowl, combine the ground pork and ground beef. Add garlic powder, onion powder, black pepper, paprika, and Cure #1. Mix well until evenly combined.

    Add Ice Water

    Gradually add the ice water to the meat mixture. Mix until the mixture is sticky and well-blended.

    Prepare Casings

    Rinse the sausage casings in cold water and soak them for at least 30 minutes. Rinse again before use.

    Stuff the Casings

    Using a sausage stuffer, fill the casings with the sausage mixture, being careful not to overfill. Tie off the ends securely.

    Cook the Sausages

    Preheat your grill or smoker to 180°F (82°C). Cook the sausages for 2-3 hours until the internal temperature reaches 160°F (71°C).

Roasted Apples Preparation

    Prepare the Apples

    Preheat your oven to 350°F (175°C). Core and slice the apples into wedges.

    Mix Ingredients

    In a baking dish, toss the apple wedges with brown sugar, cinnamon, and butter until well-coated.

    Bake in the oven for 25-30 minutes until the apples are tender and caramelized.

Rooster Mayo Preparation

    In a small bowl, combine mayonnaise, hot sauce, lemon juice, and garlic powder. Stir until smooth and well-blended.

Assembly

    Slice the cooked sausages and arrange them on a platter. Serve with roasted apples, slices of white cheddar cheese, and rooster mayo on the side.
