Granola Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Combine Wet Ingredients

    In a medium saucepan over low heat, combine the honey (or maple syrup), coconut oil, brown sugar, and vanilla extract. Stir until melted and well combined.

    Mix Dry Ingredients

    In a large bowl, mix together the rolled oats, salt, cinnamon, chopped almonds, chopped walnuts, and pumpkin seeds until evenly distributed.

    Combine Mixtures

    Pour the warm honey mixture over the oat mixture and stir until all the dry ingredients are evenly coated.

    Spread on Baking Sheet

    Spread the granola mixture evenly on a baking sheet lined with parchment paper.

    Bake

    Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even browning. The granola should be golden brown and fragrant.

    Remove from the oven and let the granola cool completely on the baking sheet. It will become crisp as it cools.

Serving

    Prepare Toppings

    While the granola is cooling, prepare the toppings by slicing the strawberries and measuring out the blueberries and yogurt.

    In serving bowls, layer the yogurt, then add a generous amount of granola on top, and finish with the sliced strawberries and blueberries.
