    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to make frites.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Preheat the Oil

    In a deep fryer or large pot, heat the olive oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels. Fry them in batches in the hot oil until golden and crispy, about 4-5 minutes per batch.

    Season the Frites

    Remove the frites from the oil and place them on a paper towel-lined plate. While still hot, sprinkle with salt, black pepper, minced garlic, and grated Parmesan cheese.

Lemon Aioli

    Mix the Ingredients

    In a medium bowl, combine mayonnaise, lemon juice, minced garlic, salt, and black pepper.

    Whisk Together

    Whisk all the ingredients together until smooth and well combined.

    Chill the Aioli

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
