Orange Caramel

    Make the Orange Caramel

    In a medium saucepan, heat granulated sugar over medium heat. Stir constantly until the sugar melts and turns amber in color. Once melted, add the butter and stir until melted, then carefully pour in the heavy cream while stirring continuously. Add orange juice and zest, stir until smooth. Set aside to cool.

Shortcrust Pastry

    Prepare the Shortcrust Pastry

    In a large mixing bowl, combine flour, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add the egg yolk and cold water, mixing until the dough forms. Wrap in plastic and chill for at least 30 minutes.

    Bake the Pastry

    Preheat the oven to 350°F (175°C). Roll out the chilled dough and fit it into a tart pan. Prick the base with a fork and bake for 15-20 minutes until golden. Let cool.

Orange Curd

    Make the Orange Curd

    In a saucepan, combine orange juice and sugar, heating until the sugar dissolves. In a bowl, whisk the egg yolks. Gradually add the warm juice mixture to the yolks, stirring constantly. Return to saucepan, cook on low heat until thickened. Remove from heat, stir in butter and zest. Cool before using.

Chocolate Orange Ganache

    Prepare the Chocolate Ganache

    Chop dark chocolate and place in a bowl. Heat cream in a saucepan until just boiling, then pour over chocolate. Let sit for 5 minutes, then stir until smooth. Mix in orange zest and let cool slightly.

    Preheat the oven to 350°F (175°C). In a bowl, mix powdered sugar and flour. Stir in egg whites and melted butter until smooth. Add orange zest. Spread thinly on a baking sheet lined with parchment paper and bake for 8-10 minutes until golden. Let cool completely.

Dehydrated Orange

    Dehydrate the Oranges

    Slice fresh oranges thinly and place on a dehydrator tray. Dehydrate at 135°F (57°C) for 6-8 hours until completely dry. Store in an airtight container.
