Make the Cherry Vanilla Shrub
In a medium bowl, combine the pitted fresh cherries and granulated sugar. Muddle the cherries with the sugar until the mixture is syrupy. Let it sit for about 30 minutes.

Combine Ingredients
After the cherries have released their juices, add the apple cider vinegar and vanilla extract. Stir well to combine.

Strain the Mixture
Using a fine mesh strainer, strain the mixture into a clean bottle or jar, discarding the solids. Seal and refrigerate for at least 24 hours. This shrub can be stored in the refrigerator for up to a month.

Prepare the Cocktail
In a cocktail shaker, add the gin, cherry vanilla shrub, and ice cubes. Shake vigorously for about 15 seconds.

Serve Over Ice
Strain the cocktail into a glass filled with fresh ice cubes.

Top off the cocktail with soda water to your liking. Stir gently to combine.

Make the Whipped Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form, about 3-5 minutes.

Spoon or pipe the whipped cream over the top of the cocktail before serving.
