Preparing the Salad

Prepare the Kale
Wash the kale thoroughly under cold water. Remove the stems and tear the leaves into bite-sized pieces. Place the kale in a large salad bowl.

Make the Caesar Dressing
In a medium bowl, whisk together the mayonnaise, lemon juice, Worcestershire sauce, minced garlic, 0.25 cup of grated Parmesan cheese, salt, and black pepper until smooth. Set aside.

Prepare the Garlic Breadcrumbs
In a skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the bread crumbs and chopped parsley, stirring to combine. Cook for an additional 3-4 minutes until the bread crumbs are golden brown. Remove from heat.
Assembling the Salad

Combine and Serve
Add the toasted pumpkin seeds, garlic breadcrumbs, and 1 cup of grated Parmesan cheese to the bowl with kale. Drizzle the Caesar dressing over the salad and toss gently to combine. Serve immediately.
