Burger Patty Preparation

    Prepare the Beef

    In a mixing bowl, combine the ground Hereford beef with salt and black pepper. Mix gently until just combined.

    Form Patties

    Divide the beef mixture into two equal portions and form them into balls. Do not overwork the meat.

Cooking the Patties

    Preheat Cooking Surface

    Heat a cast-iron skillet or griddle over medium-high heat until hot.

    Smash the Patties

    Place the beef balls on the skillet and use a spatula to smash them down into thin patties. Cook for about 3-4 minutes until browned and crispy. Flip and cook for another 2-3 minutes.

Cooking the Egg

    Fry the Egg

    In a separate non-stick skillet, add a little oil and heat over medium heat. Crack the cage-free egg into the skillet and cook until the white is set but the yolk is still runny, about 3-4 minutes. You can cover the skillet to help the egg cook evenly.

Assembling the Burger

    Prepare the Buns

    Toast the beer buns lightly on the skillet until golden brown.

    Layer the Ingredients

    On the bottom half of each toasted bun, spread 2 tablespoons of rooster mayo. Place a smashed beef patty on top, followed by shredded lettuce, a slice of tomato, a few slices of onion, and finally the sunny-side-up egg. Top with the other half of the bun.
