Prepare the Brisket
Trim any excess fat from the brisket and cut it into large cubes.

Chop the Vegetables
Dice the onion, red bell pepper, and garlic. Set them aside.

Sear the Brisket
In a large skillet over medium-high heat, sear the brisket cubes until browned on all sides. This should take about 5-7 minutes.

Combine Ingredients
In a slow cooker, add the seared brisket, diced onion, garlic, red bell pepper, diced tomatoes, kidney beans, black beans, corn, diced jalapeños, chili powder, cumin, smoked paprika, salt, and black pepper.

Cover the slow cooker and set it to low. Cook for 6-8 hours, or until the brisket is tender and flavors meld together.
