Preheat the Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Cut in Butter
Add the cold, unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Make a well in the center of the dry ingredients and pour in the buttermilk. Mix gently until just combined. Do not overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and gently knead it 5-6 times. Pat the dough into a 1-inch thick round. Use a biscuit cutter to cut out biscuits.

Bake
Place the biscuits on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until golden brown.
Sausage Gravy

Cook Sausage
In a large skillet over medium heat, cook the breakfast sausage until browned and crumbly. Drain excess fat if necessary.

Make Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for about 1-2 minutes to form a roux.

Add Milk
Gradually whisk in the milk, stirring constantly to avoid lumps. Cook until the gravy thickens, about 5-7 minutes.

Season
Stir in salt, black pepper, and red pepper flakes. Adjust seasoning to taste.
