Prepare the Potatoes

    Cook the Potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cubed breakfast potatoes, season with salt and black pepper, and cook for 15-20 minutes, stirring occasionally, until they are golden brown and tender.

Prepare the Scramble

    Sauté the Vegetables

    In another skillet, add a little olive oil over medium heat. Add the diced onion and bell pepper, cooking for about 5 minutes until they become soft.

    Cook the Andouille

    Add the sliced andouille sausage to the skillet with the vegetables. Cook for an additional 5 minutes until the sausage is browned.

    Add Corn and Seasoning

    Stir in the grilled corn and Old Bay seasoning, mixing everything together. Cook for another 2-3 minutes until heated through.

    Scramble the Eggs

    In a bowl, crack the 3 eggs and whisk them together. Pour the eggs over the sausage and vegetable mixture, gently stirring until the eggs are fully cooked and scrambled to your liking.

    Sprinkle the shredded cheddar cheese on top of the scramble, allowing it to melt for about 1-2 minutes.
