Preparing the Tenderloin

    Grilling the Beef

    Preheat the grill to medium-high heat. Rub the beef tenderloin with olive oil, salt, and black pepper. Grill the tenderloin for about 20-25 minutes, turning occasionally, until it reaches your desired doneness. Remove from the grill and let it rest for 10 minutes.

Making the Bordelaise Sauce

    Cooking the Sauce

    In a saucepan, combine the red wine and minced shallots. Simmer over medium heat until reduced by half. Add the beef stock and thyme, then simmer until thickened. Stir in the butter and season with salt and black pepper.

Preparing Whipped Potatoes

    Boil the peeled and cubed potatoes in salted water until tender. Drain and return to the pot. Add butter and heavy cream, then mash until smooth. Season with salt to taste.

Cooking Seasonal Vegetables
