Method

Preparing the Citrus Quinoa

    Cook the Quinoa

    Rinse quinoa under cold water. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed. Fluff with a fork and stir in orange zest, lemon juice, and parsley.

Making the Orange Carrot Puree

    Cook the Carrots

    In a pot, boil chopped carrots until tender, about 10 minutes. Drain and transfer to a blender. Add fresh orange juice, butter, and salt. Blend until smooth.

Crushing the Candied Walnuts

    Candy the Walnuts

    In a skillet, melt butter over medium heat. Add chopped walnuts and brown sugar. Cook, stirring frequently, until walnuts are toasted and sugar is caramelized, about 5 minutes. Remove from heat and let cool before crushing.

Cooking the Scallops

    Sear the Scallops

    Pat the scallops dry and season with salt and black pepper. Heat olive oil in a pan over high heat. Add scallops and sear for 2-3 minutes on each side until golden brown. Remove from heat.

Plating

    Serve the Dish

    On a plate, spread a layer of orange carrot puree, add a serving of citrus quinoa, and top with seared scallops. Sprinkle crushed candied walnuts on top for garnish.
