    Prepare the Lamb

    Preheat your oven to 400°F (200°C). Trim excess fat from the rack of lamb and season it generously with salt, black pepper, and fresh thyme. Rub the olive oil over the meat.

    Sear the Lamb

    In a hot skillet over medium-high heat, sear the rack of lamb on all sides until browned, about 2-3 minutes per side.

    Roast the Lamb

    Transfer the seared lamb to a roasting pan and place it in the preheated oven. Roast for about 20-25 minutes for medium-rare, or until it reaches your desired doneness.

    Prepare the Vegetables

    While the lamb is roasting, chop the seasonal vegetables into bite-sized pieces. Toss them with olive oil, salt, and pepper, and roast them in a separate pan for the last 15 minutes of the lamb's cooking time.

    Boil peeled and chopped potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper until creamy.
