    Prepare the Vegetables

    Peel and chop the carrots into bite-sized pieces. Clean the leeks and slice them into thin rings. Halve the marble potatoes.

    Sauté the Base

    In a large pot, heat the olive oil over medium heat. Add the garlic and sauté until fragrant. Add the leeks and carrots, and cook for about 5 minutes until they begin to soften.

    Add Broth and Saffron

    Pour in the vegetable broth and bring to a simmer. Add the saffron threads, salt, and black pepper. Stir to combine.

    Cook the Potatoes

    Add the marble potatoes to the pot and cook for about 10 minutes or until they are tender.

    Add Halibut

    Gently place the halibut fillets into the pot. Cover and let simmer for an additional 10 minutes, or until the fish is cooked through and flakes easily.

    Serve

    Ladle the stew into bowls, garnish with fresh parsley, and serve hot.
