Make the Curry Butter
In a small bowl, mix softened butter, curry powder, minced garlic, and salt until well combined. Set aside.

Prepare Plantain Coating
In a food processor, pulse the sliced plantains until coarse crumbs form. Season with salt and pepper.

Coat the Shrimp
Dip each shrimp in the beaten egg, then coat with the plantain crumbs, pressing gently to adhere.

Fry the Shrimp
In a large skillet, heat the oil over medium heat. Fry the coated shrimp for about 2-3 minutes on each side or until golden and cooked through. Remove and drain on a paper towel.
