Herb Crusted Faroe Island Salmon Recipe

Mint Tzatziki Sauce

Method

Prepare Salmon

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Mix Herb Crust

    In a small bowl, combine the dill, parsley, minced garlic, lemon zest, olive oil, salt, and black pepper to create a herb mixture.

    Coat Salmon

    Place the salmon fillets on a baking sheet and spread the herb mixture evenly on top of each fillet.

    Bake Salmon

    Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Prepare Israeli Couscous Salad

    Cook Couscous

    In a saucepan, bring 1.5 cups of water to a boil. Add the Israeli couscous, reduce heat to low, cover, and simmer for about 10 minutes until tender. Drain any excess water and let it cool.

    Mix Salad Ingredients

    In a large bowl, combine the cooled couscous, cherry tomatoes, diced cucumber, red onion, chopped mint, lemon juice, olive oil, salt, and black pepper. Toss gently to combine.

Prepare Mint Tzatziki Sauce

    Combine Ingredients

    In a bowl, mix together Greek yogurt, grated cucumber, chopped mint, minced garlic, lemon juice, salt, and black pepper. Stir until well combined.
