Prepare Salmon

Preheat Oven
Preheat your oven to 375°F (190°C).

Mix Herb Crust
In a small bowl, combine the dill, parsley, minced garlic, lemon zest, olive oil, salt, and black pepper to create a herb mixture.

Coat Salmon
Place the salmon fillets on a baking sheet and spread the herb mixture evenly on top of each fillet.

Bake Salmon
Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Prepare Israeli Couscous Salad

Cook Couscous
In a saucepan, bring 1.5 cups of water to a boil. Add the Israeli couscous, reduce heat to low, cover, and simmer for about 10 minutes until tender. Drain any excess water and let it cool.

Mix Salad Ingredients
In a large bowl, combine the cooled couscous, cherry tomatoes, diced cucumber, red onion, chopped mint, lemon juice, olive oil, salt, and black pepper. Toss gently to combine.
