Preparation

1

Wash the Spinach

Thoroughly rinse 10 cups of fresh spinach under cold water to remove any dirt or grit. Drain well.

2

Prepare the Garlic

Peel and finely chop 3 cloves of garlic.

Cooking

3

Heat the Olive Oil

In a large skillet, heat 2 tablespoons of olive oil over medium heat until it shimmers.

4

Sauté the Garlic

Add the chopped garlic to the skillet and sauté for about 1-2 minutes, stirring frequently, until it becomes fragrant and lightly golden.

5

Add the Spinach

Gradually add the rinsed spinach to the skillet. It may seem like a lot, but it will wilt down significantly.

6

Season the Spinach

Sprinkle 0.5 teaspoon of salt and 0.25 teaspoon of black pepper over the spinach. Stir occasionally as the spinach wilts.

7

Finish Cooking

Continue to cook for about 3-5 minutes until the spinach is completely wilted and tender.

8

Add Lemon Juice

Remove the skillet from heat and drizzle 1 tablespoon of lemon juice over the sautéed spinach. Toss to combine.
