Pasta

Method

Cooking the Pasta

1

Boil the Water

In a large pot, bring 4 quarts of water to a rolling boil. Add 1 tablespoon of salt once boiling.

2

Cook the Fettuccine

Add the fettuccine pasta to the boiling water. Cook according to package instructions, usually about 10-12 minutes, until al dente. Stir occasionally to prevent sticking.

3

Drain the Pasta

Once cooked, reserve about 1 cup of pasta water and then drain the fettuccine in a colander. Set aside.

Making the Sauce

4

Prepare the Sauce Base

In a large skillet over medium heat, melt 1 tablespoon of unsalted butter. Add 3 minced garlic cloves and sauté for 1-2 minutes until fragrant but not browned.

5

Add the Cream

Pour in 1 cup of heavy cream to the skillet and stir. Let it simmer for 3-4 minutes, allowing it to thicken slightly.

6

Incorporate Cheese and Season

Stir in 1 cup of grated Parmesan cheese until melted and combined. Season with freshly ground black pepper to taste.

7

Combine Pasta and Sauce

Add the drained fettuccine to the skillet with the sauce. Toss to coat the pasta evenly, adding reserved pasta water a little at a time if the sauce is too thick.

8

Garnish and Serve

Remove from heat and sprinkle with chopped fresh parsley. Serve hot, garnished with extra Parmesan if desired.
