Preparation
Juice the Fruits
Start by juicing the fresh lime and fresh pineapple. You can use a citrus juicer for the lime and a blender or juicer for the pineapple. Strain the juices to remove pulp, if desired.
Prepare the Simple Syrup
If you don't have simple syrup, you can make it by mixing equal parts sugar and water in a saucepan. Heat gently until the sugar is dissolved, then cool before using. Use 0.5 oz for this recipe.
Mixing the Drink
Combine Ingredients
In a cocktail shaker filled with ice, combine 2 oz of Blanco tequila, 1 oz of Triple Sec, 1 oz of fresh lime juice, 2 oz of fresh pineapple juice, and 0.5 oz of simple syrup.
Shake the Mixture
Secure the lid on the shaker and shake vigorously for about 15-20 seconds until the mixture is well chilled.
Strain and Serve
Strain the mixture into a rocks glass filled with ice or a chilled coupe glass, depending on your preference.
Garnishing
Add Garnishes
Garnish your drink with a wedge of fresh pineapple and a lime wheel on the rim of the glass.
