Lemon Truffle Aioli

Fries Preparation

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to make fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Fry the soaked potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels.

    Season and Toss

    While the fries are still hot, drizzle with white truffle oil, sprinkle with salt, and toss with chopped herbs and shaved Parmesan.

Lemon Truffle Aioli Preparation

    Mix the Ingredients

    In a bowl, combine mayonnaise, minced garlic, lemon juice, white truffle oil, and salt. Mix well until smooth.

    Cover and refrigerate the aioli for at least 15 minutes to let the flavors meld.
