1. Combine Ingredients
In a cocktail shaker, combine the pisco, agave syrup, fresh lemon juice, and egg whites.
2. Dry Shake
Shake the mixture vigorously without ice (this is called a dry shake) for about 15 seconds to emulsify the egg whites.
3. Add Ice and Shake Again
Add ice to the shaker and shake again for another 15-20 seconds until well chilled.
4. Strain and Serve
Strain the mixture into a chilled coupe or cocktail glass.
5. Add Bitters
Add 2 dashes of Angostura bitters on top of the foam created by the egg whites.
6. Garnish (optional)
Garnish with a lemon twist or a dash of additional bitters if desired.
