Preparation

Tofu Preparation

1. Prepare the Tofu

Press the tofu to remove excess moisture. Cut it into cubes and toss with maple syrup and soy sauce. Let it marinate for 15 minutes.

2. Coat and Cook

Toss the marinated tofu in cornstarch until well coated. Heat vegetable oil in a pan over medium heat and fry the tofu until crispy and golden brown, about 5-7 minutes. Set aside.

Cauliflower Preparation

3. Roast the Cauliflower

Preheat the oven to 400°F (200°C). Toss the cauliflower florets with olive oil, turmeric, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender and slightly charred.

Salad Preparation

4. Make the Salad

In a bowl, combine diced cucumber, radishes, and apple. Drizzle with lemon juice and sprinkle with salt. Toss well and set aside.

Coconut Rice Preparation

5. Cook the Rice

In a saucepan, combine coconut milk, water, jasmine rice, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and liquid is absorbed. Fluff with a fork.

Assembly

6. Assemble the Bowl

In a bowl, layer the coconut rice, crispy tofu, roasted cauliflower, salad, sliced avocado, pea shoots, and sprinkle with hemp seeds. Drizzle with green goddess dressing on top before serving.
