Cook the Pasta
Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the diced onion and sliced red bell pepper. Sauté until the onion is translucent.

Add Kale and Sundried Tomatoes
Stir in the chopped kale and sundried tomatoes. Cook for about 3-4 minutes until the kale is wilted.

Cook the Prawns
Add the prawns to the skillet. Cook for about 2-3 minutes until they turn pink and are fully cooked.

Make the Sauce
Pour in the heavy cream and stir to combine. Let it simmer for a couple of minutes. If the sauce is too thick, add a little reserved pasta water.

Combine
Add the cooked tagliatelle to the skillet, tossing to coat in the sauce. Stir in the chopped basil, salt, and pepper to taste.

Serve
Drizzle with chili oil, top with freshly shaved Parmesan cheese, and serve immediately.
