    Prepare the Fries

    Peel and cut the russet potatoes into thick fries. Rinse in cold water to remove excess starch, then pat dry.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    Make the Gravy

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook until light brown, about 3 minutes. Gradually whisk in the broth and soy sauce. Bring to a simmer and cook until thickened, about 5-10 minutes. Season with salt and black pepper to taste.

    Assemble the Poutine

    Place a generous portion of fries on a plate, top with cheese curds, and pour hot gravy over the top. Garnish with fresh herbs.
