Method

Coconut Rice

    Cook the Rice

    In a medium saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a simmer over medium heat.

    Reduce heat to low, cover, and cook for 15-20 minutes or until rice is tender and liquid is absorbed. Fluff with a fork and keep warm.

Salmon and Maple Soy Glaze

    Prepare the Maple Soy Glaze

    In a bowl, whisk together soy sauce, maple syrup, minced garlic, and grated ginger.

    Marinate the Salmon

    Marinate the salmon fillets in the glaze for at least 15 minutes.

    Preheat a grill or a skillet over medium heat. Cook the salmon for about 4-5 minutes on each side or until cooked through and flakes easily.

Sesame Cucumber Aioli

    Make the Aioli

    In a bowl, combine grated cucumber, Greek yogurt, sesame oil, lemon juice, and minced garlic. Mix well.

Vegetables and Pineapple Salsa

    Roast the Yams

    Roast cubed yams in the oven at 400°F (200°C) for 25-30 minutes or until tender.

    In a bowl, mix diced pineapple, red onion, cilantro, and lime juice to make the salsa.

Assemble the Bowl

    In a bowl, layer the coconut rice, followed by the salmon, aioli, shredded cabbage, roasted yams, sliced bell peppers, and pineapple salsa.
