Prepare Coconut Rice

Cook Rice
Rinse 1 cup of jasmine rice under cold water until the water runs clear. Cook the rice with 1 cup of coconut milk and a pinch of salt in a rice cooker or pot until fluffy.

Marinate Tuna
Cut the ahi tuna into small cubes. In a bowl, combine soy sauce, sriracha, sesame oil, chopped green onions, and sesame seeds. Add the tuna to the marinade and let it sit for 15 minutes.

Build Your Bowl
In a serving bowl, place a generous scoop of coconut rice as the base. Top with marinated ahi tuna, sliced avocado, wakame, halved grape tomatoes, thinly sliced watermelon radish, sliced cucumber, diced pineapple, and a sprinkle of red tobiko.

Finish the poke bowl with crispy onions and drizzle with wasabi aioli. Serve immediately.
