Hot Smoked Salmon

    Prepare the Salmon

    In a bowl, mix smoked paprika, brown sugar, sea salt, black pepper, and liquid smoke. Rub this mixture onto the salmon fillet. Let it marinate in the refrigerator for 1 hour.

    Preheat the smoker to 225°F (107°C). Place the salmon in the smoker and smoke for about 1.5 to 2 hours, or until the salmon is fully cooked and flakes easily with a fork.

    In a saucepan, combine white vinegar, water, sugar, salt, oregano, and garlic. Bring to a boil, then remove from heat. Pour the mixture over the sliced eggplant in a jar. Let it cool to room temperature and then refrigerate for at least 24 hours before serving.
