    Prepare the Apples

    Wash and core the fresh apples, then chop them into small pieces. Place them into a large pot.

    Cook the Apples

    Add water and bring the mixture to a boil. Reduce the heat and let it simmer for about 30 minutes, stirring occasionally until the apples are soft.

    Strain the Mixture

    Using a fine strainer or cheesecloth, strain the apple mixture to extract the juice. Discard the solids and return the juice to the pot.

    Add Ingredients

    Stir in the sugar, cinnamon sticks, cloves, and lemon juice into the strained apple juice.

    Cool and Add Yeast

    Let the mixture cool to room temperature, then sprinkle the yeast over the surface. Allow it to sit for about 10 minutes before stirring it in.

    Ferment the Cider

    Transfer the mixture to a fermentation vessel (like a glass carboy) and seal it with an airlock. Allow the cider to ferment in a cool, dark place for about 2-4 weeks.

    Once fermentation is complete, siphon the cider into clean bottles, leaving some space at the top. Seal the bottles and store them in a cool place.
