6 oz AAA Alberta Beef Sirloin, demi-glace, hand cut skinny fries, chipotle aioli **can be gluten free**

Method

Cooking the Steak

    Prepare the Steak

    Season the AAA Alberta Beef Sirloin with salt and black pepper on both sides.

    Cook the Steak

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the steak and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

    Prepare the Demi-glace

    In the same skillet, add demi-glace and simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.

Preparing the Fries

    Cut the Potatoes

    Wash and cut the potatoes into skinny fries. Rinse them under cold water to remove excess starch.

    Fry the Potatoes

    Heat remaining tablespoon of olive oil in a deep pan over medium heat. Add the fries and cook until golden brown, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt.

Serving

    Plate the Dish

    Slice the rested steak and plate it alongside the hot fries. Drizzle the steak with the demi-glace and serve with chipotle aioli on the side.
