Winemaking Process

Prepare the Grapes
Harvest ripe Garnacha grapes and destem them. Crush the grapes to release the juice.

Fermentation
In a fermentation vessel, combine the crushed grapes, water, and sugar. Add the yeast and mix well. Cover the vessel with a cloth, allowing it to ferment for about 7-10 days at room temperature.

Pressing
After fermentation, press the mixture to separate the liquid from the solids. Collect the juice in a clean container.

Add Sulfites
Add sulfites to the juice to inhibit unwanted bacteria and wild yeast.

Age the Wine
Transfer the wine to oak barrels or glass carboys for aging. Allow it to age for a minimum of 6 months for optimal flavor.
