Method

Lobster Preparation

    Butter Poach the Lobster

    In a saucepan, melt butter over low heat. Add the lobster and cook for about 8-10 minutes until the lobster is cooked through and tender. Remove from heat and let it cool slightly before chopping into bite-sized pieces.

Malt Aioli Preparation

    Make the Malt Aioli

    In a bowl, mix mayonnaise, malt vinegar, lemon juice, salt, and pepper until well combined. Adjust seasoning to taste.

Salad Preparation

    Prepare the Salad

    In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. Drizzle with olive oil and balsamic vinegar, season with salt and pepper, and toss to combine.

Fries Preparation

    Make the Skinny Fries

    Preheat the oven to 425°F (220°C). Slice the potatoes into thin strips. Toss with olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes, flipping halfway through, until crispy.

Assembly

    Assemble the Lobster Roll

    Lightly toast the brioche buns. Layer with butter lettuce, followed by the butter-poached lobster. Top with fried leeks and a generous drizzle of malt aioli. Serve alongside the mixed green salad and house skinny fries.
