    Prepare the Lobster

    Fill a large pot with water, add a generous amount of salt, and bring to a rolling boil. Carefully add live lobsters to the pot, cover, and cook for about 10-12 minutes, or until lobster turns bright red and is cooked through. Remove lobsters and place them in a bowl of ice water to stop the cooking process.

    Prepare the Potatoes

    While the lobsters are cooking, wash and cut the potatoes into wedges. In a separate pot, bring salted water to a boil and add the potato wedges. Cook for about 10-15 minutes or until tender. Drain and let cool slightly.

    Cook the Potatoes

    Heat a skillet over medium-high heat and add a bit of oil or clarified butter. Add the potato wedges and fry until crispy and golden brown on all sides. Season with salt to taste.

    Prepare the Serving

    Carefully crack the lobster shells and arrange them on a serving platter with potato wedges. Garnish with lemon wedges and serve with a bowl of warm clarified butter for dipping.
