Winemaking Process
- 1
Harvesting
Select fully ripe Nebbiolo grapes from the vineyard and harvest them by hand.
- 2
Crushing
Gently crush the grapes to release the juice while retaining the skins for color and tannins.
- 3
Fermentation
Transfer the crushed grapes to fermentation tanks and allow them to ferment for 10-14 days at controlled temperatures.
- 4
Pressing
After fermentation, press the mixture to separate the wine from the grape skins.
- 5
Aging
Age the wine in oak barrels for at least 12-24 months to develop complex flavors.
- 6
Bottling
Once the aging process is complete, filter and bottle the wine for consumption.
