Winemaking Process

Harvesting the Grapes
Begin by hand-picking the Chardonnay grapes from the vineyards in Beamsville Bench, ensuring only the best quality fruit is selected.

Crushing and Pressing
Crush the harvested grapes and press them to extract the juice. Separate the juice from the skins and seeds.

Fermentation
Transfer the juice to a fermentation vessel. Add organic yeast to initiate fermentation. Monitor the temperature and fermentation process for approximately 2-4 weeks.

Malolactic Fermentation
After primary fermentation, inoculate the wine with malolactic bacteria to soften the acidity. Allow this process to take place for another 2-4 weeks.

Aging
Transfer the wine to oak barrels for aging. Allow it to mature for at least 6 months, during which it will develop complex flavors.

Bottling
Once the aging process is complete, carefully transfer the wine into bottles, adding a small amount of sulfur dioxide to preserve the wine.
