Method
Prepare the Rice

Cook the Jasmine Rice
In a medium saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and liquid is absorbed. Fluff with a fork and set aside.
Cook the Shrimp and Vegetables

Sauté Shrimp and Vegetables
In a large skillet over medium heat, add a splash of oil. Add the diced eggplant, bell peppers, and jalapeno, and sauté for about 5 minutes until softened. Then add the shrimp and cook until they turn pink, about 3-4 minutes.

Add Curry Sauce
Stir in the green curry paste and coconut milk into the skillet. Add fish sauce, brown sugar, and lime juice. Simmer for another 5 minutes until everything is well combined and heated through.

Plate the Dish
Serve the green curry shrimp over a bed of coconut jasmine rice, garnishing with shaved carrots and chopped cilantro on top.
