Prepare the Dipping Sauce
In a small bowl, mix together 3 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of honey, and a pinch of crushed red pepper. Set aside.

Soften the Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds, or until it softens. Remove and lay it flat on a clean surface.

Fill the Wrapper
In the center of the softened rice paper, layer a small amount of carrots, cucumber, red bell pepper, mint leaves, cilantro, lettuce, and shrimp or tofu if using.

Roll the Spring Roll
Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top, creating a roll. Repeat with the remaining wrappers and filling.

Serve
Arrange the spring rolls on a serving plate and serve with the dipping sauce.
