Cook the Spaghetti
Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Prepare the Pancetta
In a large skillet, heat olive oil over medium heat. Add diced pancetta and cook until crispy, about 5-7 minutes. Add minced garlic and cook for an additional minute, until fragrant.

Make the Sauce
In a mixing bowl, whisk together eggs, grated Parmesan cheese, and black pepper until well combined.

Combine Ingredients
Add the drained spaghetti to the skillet with pancetta and garlic. Remove the skillet from heat. Quickly pour the egg and cheese mixture over the pasta, tossing thoroughly to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve immediately, garnished with additional Parmesan cheese and black pepper as desired.
